First of all, broccoli is tasty! Everybody who says differently is wrong. This Broccoli Pasta recipe will proof you can eat a healthy, vitamin rich and low fat meal while tasting great at the same time!
And because of the chicken, egg and broccoli this broccoli pasta is protein rich!

Although you are free to change the sauce of this recipe with cheese, cream or tomato sauce, we go for a hearty broccoli pasta sauce with an egg basis. Just like a carbonara recipe!
For this Broccoli Pasta recipe we will add chicken; to make this vegetarian just skip the meat!

Broccoli Pasta step-by-step
Ingredients for Broccoli Pasta

1 big Broccoli | 10 ounces | 300 gram |
Tagliatelle or spaghetti | 10 ounces | 300 grams |

Chicken filet | 7 ounces | 200 grams |
Eggs | 4 eggs | 4 eggs |

Feta Cheese | 5 ounces | 150 grams |
Black olives | 3 ounces | 100 grams |
Broccoli Pasta Preparation
- Cut the broccoli in even pieces. Just cut them from the stem so you have little roses. You can eat the stem too: chop in long slices.
- Cut the chicken in long slices (or cubes, whatever you like)
- Beat the eggs in a bowl!
Broccoli Pasta Cooking Instructions
- Start boiling the water to cook the pasta. Add 1 cube of broth!
- Cook the pasta al Dente. Read here how to cook pasta to perfection.
- Start cooking the broccoli in the chicken broth/stock for about 5 minutes. The broccoli is ready when you prick it with a fork and the fork goes in easily.
- Start frying the chicken in some oil. If you want you can also add 1 chicken broth cube here. This will make the chicken go really well with the broccoli, add when the chicken is almost brown!
- Take out the broccoli when ready and drain well.
- Take 1/3 of the broccoli florets (the top) and cut in very small pieces. This should go quite easy because they are all very small separate pieces if you look good!
- Add this to the egg and beat the mixture a bit more until it’s 1 nice green egg mass.
- Cut the rest of the broccoli in bite sized pieces!
- Drain the pasta and put on a very low heat.
- Add the broccoli-egg-sauce and stir until it’s all around the pasta!
- Add the rest of the broccoli, chicken and the olives!
- Give it a final stir and let it rest for a minute! So all ingredients get used to each other.
- Finally, add the feta cheese! You add this in the end because we don’t want the feta to melt.
- You’re home-cooked broccoli pasta is ready! Be proud!
