Cold Pasta Salad

This cold pasta salad will warm you at any time. Great for summer barbecues, yet great for winter time with some bread.

Although this recipe has smoked chicken, you can always choose for a vegetarian cold pasta salad and substitute this anything else you like! Just don’t forget to KIS – keep it simple.

Ah, and if you don’t like Greek yoghurt just try crème fresh or even a few spoons of mayo! Anything goes with cold pasta salad. You can even try a bit of honey mustard!

Cold Pasta Salad step-by-step

Ingredients for an Cold Pasta Salad

Penne 10 ounces 300 grams
Greek Yoghurt 7 ounces 200 ml
Smoked chicken 7 ounces 200 grams
Bell Pepper 1 big bell pepper 1 big bell pepper
Peanuts 4 ounces 120 grams
Spring onions 2 ounces 50 grams
Chives 1 ounce 30 grams
Salt & Pepper A few pinches A few pinches

Cold Pasta Salad Preparation

  • Slice the smoked chicken in long stripes
  • Chop the bell pepper in small to medium sized chunks
  • Cut the Spring onions in small pieces
  • Chop the chives small
  • Season the Greek yoghurt with salt/pepper and add the chives

Cold Pasta Salad Cooking Instructions

  1. Start cooking the pasta al Dente. Read here how to cook pasta to perfection.
  2. We want the pasta to be cold, so you can just drain when ready!
  3. Add all the ingredients to the cold pasta and stir gently:
    • Bell pepper
    • Peanuts
    • Spring onions
    • Smoked Chicken
  4. When all mixed add the seasoned chive yoghurt.
  5. Add some salt and black pepper to taste!
