Brown sugar or Honey 1 tablespoon 1 tablespoon
Optional some cream 1oz 50ml
Optional sundried tomatoes 3 ounce 100 grams
Optional olives 3 ounce 100 grams

Pasta Sauce Recipe Preparation

Peel the tomatoes

  1. Make an “X” on the bottom (or top, doenst matter) with a knive on all tomatoes
  2. Drop the tomatoes in boiling water for about 20 sec
  3. Take the tomatoes out and put them all in ice water
  4. When cooled down a bit, you’ll see it’s very easy to take the skin of the tomatoes!
  5. That’s it. Put the tomatoes somewhere for later use!

Further Preparation

  • Cut the onion in small pieces!
  • Cut the garlic in small pieces!
  • If you want to put olives & sundries tomatoes in there, cut them in small pieces too!

Pasta Sauce Recipe Cooking Instructions

  1. Fry the onion a little on medium fire with all the oil! About 5min
  2. When the onion start to get a bit transparent, add the garlic! Stir!
  3. Add all of the fresh and dried herbs (Thyme, oregano, basil, salt & pepper) and get all the oil and flavors everywhere.
  4. Add all of the peeled tomatoes! And stir like you have never stirred before!
  5. Make sure everything is nicely mixed together!
  6. Put the sauce on the lowest heat and let it simmer
  7. Simmer for about 1.5 hours till the sauce darkens and gets more thick
  8. Just have a look every 20min, stir a bit, talk to it, be nice!
  9. Don’t forget to taste once in a while.
  10. Take out the fresh thyme twigs! We don’t need them anymore.
    • You don’t to blend the sauce, but if you have an immersion blender.. go for it! It will make the sauce nice and smooth! Blend, mix and chop it!
  11. Now taste the sauce and tweak to perfection
    1. If the sauce tastes sour: Add some brown sugar or honey
    2. If the sauce tastes sour: Add some cream
    3. If the sauce tastes a bit dull: Add some more salt en pepper
    4. If the sauce tastes a bit “flat”: Add some dry full red wine, this will give more dimension to the sauce. A cup will do, just taste and stir and taste
    5. If you like your sauce spicy: Add some fresh chili peppers
    6. Is you like your sauce more fresh: Add lots of chopped fresh basil and some cream! Really does the trick!
