Sausage Pasta

Although most sausages are fried in a pan or grilled on a BBQ, for pasta the best way is to grill them in an oven. This will make the sausage crunchy and to give it more flavor. This is the best and easiest sausage pasta you will ever make!

However this is a very simple recipe; there quite some steps to follow… Don’t let this frighten you; it’s very easy and no stress making it. The oven is your friend!

Simply put: Add all ingredients in the oven and take it out 40 min later… Your sausage pasta is almost done!

Especially with cheap sausages using an oven can make a difference. Yet we suggest to use biological & free range meat for this sausage pasta, whatever floats your boat will do!

Sausage Pasta step-by-step

Sausage Pasta Preparation

  • Mix the oregano with 1 table spoon of olive oil
  • Take the skin of the garlic (don’t chop, we will grill them in the oven!)
  • Slice the eggplant in long thin slices
  • Separate the rosemary from the twigs and chop as small as possible!
  • Preheat the oven at 360 fahrenheit / 180 celcius
  • Put baking paper on the oven tray or use some oil.

Ingredients for a Sausage Pasta

Tagliatelle or spaghetti 12 ounces 400 grams
Sausages (any kind) 16 ounces 500 grams
Tomato sauce 18 ounces 0.7 Liter

Rocket 2 ounces 50 grams
Dried oregano Few pinches Few pinches
Fresh rosemary 2 branches 2 branches

Sausage Pasta Cooking Instructions

First we will roast some ingredients such as the sausages, zucchini and garlic cloves in the oven. Second we will make the pasta and the sauce. If you want to use homemade pasta sauce, please find some great recipes here or here.

  1. Spread the uncooked sausages and eggplant slices evenly over the oven tray. Make sure the eggplant slices are all individually spread
  2. Put the peeled garlic cloves close to the sausages. The sausages will produce some fat while being baked and the garlic likes this!
  3. Spread/twirl the oregano oil evenly over all ingredients.
  4. Add half of the chopped rosemary over this as well.
  5. Use 1 more tablespoon of oil and spread evenly!
  6. Add enough salt and pepper to the eggplant slices.
  7. Bake for about 15-20 minutes – keep an eye on the oven!
  8. Take out the tray and turn all ingredients so not only 1 side will get brown. It’s like being in the sun, tan evenly or don’t tan at all!
  9. When the eggplant is almost burned take and the sausages are all done, turn off the oven.

Now we will cook the pasta and prepare the sauce for the Sausage Pasta

  1. Start cooking the pasta al Dente. Read here how to cook pasta to perfection.
  2. Put the rest of the oil in a frying pan and add the onion on medium heat.
  3. Fry for about 10min until light brown and add the oven roasted garlic cloves
  4. Add the other half of the rosemary to the pan and stir!
  5. You can now also add the tomato sauce and let it boil a little.
  6. When the sauce boils, add the sausages and put on low heat and let it cook for about 10-15min.
  7. Drain and serve the pasta on a plate.
  8. Add a few eggplant slices on top of the pasta
  9. Add the sauce with sausages and grilled garlic on top of this!
