For this reason we’ll treat Zucchini as a vegetable for this zucchini lasagna recipe. What a time to be alive!

Zucchini can be a hard vegetable to prepare correct. Not a lot of people know that is goes great in salads when eaten raw. But just warmed up or baked a bit, zucchini may be a bit slimy and tasteless.

Of course you are free to prepare you zucchini the way you like, we would like to give 1 way of preparing a zucchini the right way for great zucchini lasagna. For this zucchini lasagna we will use grilled zucchini as lasagna sheets. The zucchini will be dried in the oven and can also be eaten as chips or crisps when it comes out of the oven!

Zucchini Lasagna step-by-step

Ingredients for Zucchini Lasagna

Ground chicken 16 ounces 500 grams

Tomato sauce 33 ounces 1 liter

Sundried tomatoes 4 ounces 120 grams

Mozzarella 7 ounces 200 grams
Dried oregano 1 tablespoon 1 tablespoon

Zucchini Lasagna Preparation

To make Zucchini lasagna sheets we will grill these in an oven. First, making the zucchini lasagna sheets; and second the sauce / the final dish.

  • Preheat the oven at 356°F or 180°C
  • Chop the garlic as small as possible
  • Chop the onion as small as possible
  • Chop the olives in half
  • Slice the sundried tomatoes in thin slices
  • Slice the tomatoes in thin round slices and take out the seeds
  • Slice the mozzarella in slices
  • Slice the zucchini in its length as thin as possible! Like really thin!

Zucchini Lasagna Cooking Instructions

  1. Put the zucchini slices on some baking paper and generously add: salt; pepper; and dried Oregano
  2. Bake for about 20min
  3. Turn around all the zucchini slices and bake for another 15min.
  4. If the zucchini slices are not dry/crunchy: bake longer until dry!

Cooking the sauce

  1. Sauté the chopped onion and garlic on medium heat
  2. Add the ground chicken and bake until It’s cooked
  3. Add the tomato sauce, the olives and sundried tomatoes.
  4. When the sauce is boiling turn of the heat: let’s make layers!
  5. Put a little sauce in the casserole so there is a thin layer that covers the whole bottom.
  6. Put a layer of zucchini sheets.
  7. Add a layer of pasta sauce. Just enough so it covers all sheets.
  8. Keep on doing this until you all zucchini and sauce is finished
  9. Put the tomato slices on top and add the mozzarella slices!
  10. Season with some more pepper, salt and oregano
  11. Bake in the over at 20min at 356°F or 180°C
